Overall a very good experience, only our 2nd time to process beef so I had some questions regarding the cuts. The secretary tried to help but didn't know all the detailed stuff, would have been nice to chat with the butcher for clarification. Great facility, they let us tour it and then we got to see our beef hanging in the cooler before being packaged and it was stamped with the state seal. Exactly correct weights (we weighed at home as we loaded them), correct finished poundage received back so no funny business here. That's the advantage of a state inspected if you choose to pay the extra which we did.
Generally happy with the cuts, got a couple of strange cuts we didn't ask for (shoulder steak, with part of the bone...?). And asked for the hanger but didn't get it. Otherwise everything else was spot on.
We wanted 14 days hanging but they were backed up so ended up being close to 30, not a major issue but just not our preference. Any longer and I would be concerned with food safety.
So just be clear on a hanging time and call to verify before you drop off, if they are backed up you may ask if you can bump back your date a week or two. Also I will be sure to chat with the butcher about the cut sheet next time. Will def be back though!

1/2 calf asked for heart, liver and hooves. Didn't receive anything other than cut beef. An explanation would have been nice. The staff was friendly.

I have taken my Wagyu all over the state but these guys are the best. Easy to work with and never had a customer be unsatisfied with the product.

I dropped a doe off to be ground in to hamburger meet the deer was already quartered up in a cooler. I picked it up and payed them $131.00 when I opened the box I had 13 pounds of ground meet that comes out to $10 a pound to grind the meat up.

We used TPP this past month with 2 hd. First we had an older calf, stepped on by its momma so back legs didn’t work properly. We informed TPP of this when scheduling the appointment, and decided it best to have it done on their Texas State Inspection day. The inspector informed me it should be fine, it walked off the trailer fine but she still needed to inform the state vet and send videos. An hour after I left (no going back to get it), they called and the State Vet condemned the calf, saying it had “Neurological Issues”. Nothing I can do, the state took it for testing. Money lost, I understand not their fault. Then I was told “anyone will say anything to have an animal butchered”. Since I didn’t have proof from our vet we couldn’t fight it. I was upset, but gave them benefit of the doubt. We had another appointment for a steer, which was close to 30 months of age. We brought it in, I knew of his age so we selected bone out cuts of beef to avoid the issue with the spine since you can’t have t-bones and such with cattle over 30 months old. Then I got a call from them stating since he was 30 months old I would be “losing a lot of beef and we just wanted to inform you”. This is poor butchering experience. We didn’t understand what they were referring to since we’ve had many cattle butchered past the 30 months of age. I argued we shouldn’t lose anything but fat or connective tissue which connects the ribeye to the spine. Went to pick up our beef, they had to reseal 2 packages due to vacuum seal not being done properly, the packaging was poorly done and the meat was squished down you couldn’t tell what cuts of meat they were. Our ribeyes look like cutlets, they cut down the spine instead of taking the time to cut out our ribeyes from the spine. We’ve lost close to $1500 in profit since we now can’t sell this low quality cuts of beef in our store. I also didn’t receive the tallow we asked for due to them writing “fat” on the cut sheet and the butcher didn’t know what it meant. They aren’t experienced enough I’m assuming, but do not want to take any blame for the poor quality that was done, and they did ask how they could “fix it”. To them I replied I have no idea, I can’t get my $ back. They told me “next steer I can offer a discount”. I won’t be bringing any other animal to this butcher, and I suggest others avoid this place as well. I don’t like leaving a bad review anywhere, but if someone had warned me beforehand I wouldn’t be out $1500 and a whole calf.
