As a newcomer to south central Texas, I get that parisa is a thing. And, I like parisa. But, on a tip from a kid in the meat section at HEB, we went to Alvarez and got *their* parisa. Now, I understand.

Consistently good parisa! I've gotten it maybe... 5 times now. Fresh, with a bit of spice (in the form of very finely diced jalapeño), but not too much. Good balance of flavors.

Great meat market!!! There's always been a little controversy in our family about Dziuk's meat market, or the old Nester's Market (now closed). We were told that one of Nester's old employees now had Alvarez Meat Market, so we decided to swing by.We met Bobby, the owner, who actually did work at Nester's as a young man. He indicated that his sausage was essentially the same flavor as Nester's, and he wasn't kidding. Bobby was kind enough to give us a very large sample of his dried sausage, along with some cheese. Jess even came out and offered crackers to go along with everything!It was a no brainer at that point to load up on both dried sausage, as well as "ready to cook".I know that next time we're in Hondo, we'll be stopping by.As for Alvarez vs Dziuk's? I can't pick one over the other, they're both fantastic!

Local mart that has the BEST homemade tortillas and Parisa (if you're in to it). Their selection of meat is great and they have always been a staple in Hondo. Try them out, they have drive thru!

Didn't think I would like the parisa, but I have to say I'm hooked on it! People are very friendly. Anytime I'm headed that way, I make a point to go by and get a couple.

What Gary B said... My husband is originally from the area so we've tried a lot of different versions of Parisa... Alvarez is my Fav... $8 tub Parisa is finely ground lean beef, finely diced onion and jalapeño, finely grated cheddar cheese, juice from two limes, salt, pepper, garlic powder... eaten on a saltine cracker. The juice from the lime is what 'cooks' the meat so it's more like a tar-tar. Try it... you just might like it!!! P.S. I need more than one sleeve of saltines per tub, so grab two!

If you are ever in the area this place is worth the stop. They make a parisa that is to die for. Make sure to get a sleeve of saltines as well. Parisa is a wonderful snack made from raw lean beef. A tradition meal from the Alsation border region of France and Germany. The treat is kept alive in the small towns of Hondo, D'Hanis, Castroville and Quihi. Muy bueneo!
