Some may think it's odd to check into a gas station, but Valley natives know that Stripes convenient stores are home to the Laredo Taco Company. Breakfast tacos for $.99-1.99? Can't beat that!! Go early (I'm talking 8:00 am) to get your choice of filling. They make the tortillas from scratch and use pretty local ingredients; like chorizo from Edinburg and potatoes from the Upper Valley. Stripes started in Corpus Christi so, the Laredo Taco Co. knows it's spice. If you order chilaquiles or get some of the pica de gallos/salsas, expect the perfect spice/flavor combination. My favorites have to be the Q-Taco; potato and egg with refried bean and cheese. I also have tried the barbacoa, chorizo and potato, and the picadillo con papa. Interested in trying something other than a breakfast taco? Try a corn gordita which is a great pocket of breakfast goodness.
