“Got a nice big ribeye for Christmas eve. A little salt, a little Chicago season on one side, Monterey steak on flip side. Over charcoal in my grill. Sear 3 minutes and flip. Sear again 3. Off 1 minute and back on both sides for 2 minutes. Rest again 1 minute. White hot foals should temp you about 135 at this point. Flipping will ensure your getting a equal cook. I prefer near blue for my steak but a nice medium rare for a thick steak should be close to this.My Gawd I won't buy a steak anywhere from Neville's. The meat is perfect with light seasoning.
