Just tried their camenbertha. The 8 Oz. Round was very soft. Upon slicing the inside was completely liquid, see pic. Even runs off the cracker. Rind is stiff. Flavor is mild funk, mushrooms and milk or half and half...so is the rind..very mild. Unfortunately we could not enjoy it due to its ultra runny physical state. I'm not even sure how to store it once we cut into it. For $32 per pound, I expected more.FWIW purchased in CA.

I have been looking for decades for this cheese. I have looked for this triple creme brie in not only in the US, but Europe as well. I cannot say enough about this cheese because I'm eating it now. I will bring some to to my local cheese shop. I have an online order coming soon. Keep up the artesian work.

This st Stephen is sublime. I believe that is a rap . It’s as close to perfect as I have ever had . Whom ever you are making this glorious cheese you are worthy of a very special place in the universe. Bless you my friend , I will find your farm with fresh asparagus, bread , olives and a Sancerre . One of the best soft cheeses we can purchase in the United States. I was shopping at my local health food store and literally heard a senior woman scream, "They have it!" Of course, I had to run over to see what it was that so thrilled this discriminating cheese shopper.There were three rounds. She bought two, and I bought one. I wish I knew who she was to go back and thank her. Such a treat!It must be hard for them to get in on a consistent basis because it hasn't been on-the-shelf since.

Great cheese, yes it is!I put together a smoked beef tongue.Don't stick your nose up.The tongue is from Hilltown processing plant. In Cannan NY.The blend with my smoked tongue was fantastic. The creamy texture went over very well

Don't be deterred by the unlikely building (it's an old schoolbuilding)--bring cash for self-service (honor system) and get yourself some SCRUMPTIOUS artisanal ricotta and a little wheel of St. Stephen's cheese. That ricotta elevated my simple baked ziti to something special. Worth our detour.
