They keep hiring and firing people for practically no reason at all. Every time I go in, there are new employees that I never see again. They don’t get lunch breaks, even though that’s illegal. Manager claims they have to work between 5 and 6 hours to get a 10 minute lunch break, which doesn’t make much sense, because they’re open 5 to 7 hours throughout the week. If you ask for a break, they say no. It doesn’t even matter how long the break is. Manager is a manipulative nit-picker and speaks with a constant attitude, both towards employees and customers (unless they are Latino, like she is, in which case she is very kind and speaks a lot softer).
The venison tenderloins are tiny and kind of tough, even when cooked rare. There isn’t a single form of raw duck in the store, it’s all stuff that’s been pre-made and packaged. Pretty much the only thing you can get here effectively is pork and beef, and even then, it’s not a guarantee that you’ll get exactly what you want. There is no fish besides frozen tuna and frozen salmon. There is a very sad looking frozen lobster tail as well. If you are fat, white, work a white collar job and have in-laws you don’t like, this is the store for you — it can be your one-stop-shop for getting fatter, refusing to engage in culture, a grilling break from your full time job, and a way to impress your in-laws that you hate. That was most of what everyone was in there for. When someone came in for something cultural, they were noticably ignored WAY more than if someone came in just looking for a ribeye to grill.
They don’t really care about culture other than their own, which primarily seems to be Columbian, based on the manager, Nelcy. When customers and employees have expressed themselves by starting a conversation about their culture, their hobbies, their likes/dislikes, even just their plans for cooking whatever they’re going to buy, I can see them feel ignored and cast to the side by Nelcy. She doesn’t treat customers like people, and she weirdly stares at customers, watching them when they don’t interact with her, and she follows them around the store. She is not open or friendly, and very clearly is trying to pretend to be open and friendly. The business would highly benefit from a working hiring manager to help train new employees and interview potential employees. It seems very much like Nelcy is somehow looking for someone to be a clone of herself so her business doesn’t fall apart, but she clearly does not want to trust anyone except herself with her business. Year 7 for businesses is the make or break year, and as an economist, based on the evidence, I doubt they’re going to be open for much longer.
Nelcy, if you see this; I am fully qualified to cut meat. The fact that you didn’t let me shows you have some pretty major control issues that are leaking into the workplace. You’re giving attitude to complete strangers and acting like everything they do is wrong. Except to Orlando. You feel a soft spot for him because he’s a Latino immigrant, like yourself. You played favorites. He can’t cut meat. I already can and you specifically did not let me handle a knife? What? Your interactions with everyone feel dead and lifeless and you have no passion or happiness for what you’re doing, and it shows.
You’re out of your mind for letting me go. Good luck finding someone else with my level of passion for the art of butchery and my level of intelligence. I have a 206 tested IQ. You said you desperately needed help, and I helped. You clearly got less stressed as the week went on because I was helping so much. But you desperately need to exert control over everyone and everything about this business (which is why you get so sheepish and anxious when a friend of yours and John’s comes in, because you’re used to purely attacking people while at work, and now you have to switch up to be nice). You need therapy.

Great selection of meats, many of which are hard to find. I have put in special orders for some game birds just to try something new. Service is efficient and orders have always arrived on time. The prices seem on the higher side. I have not tried any of the more common meats so I cannot speak on if the quality meets the price, but I can recommend this place for anyone wanting to try something new.

This place definitely has quality meats, but the extremely overpriced meats do not justify shopping here ever.My father was in-town visiting and stopped here to purchase some steaks for the family. He requested Porterhouse steaks and was quoted for $44 per pound, which is absurd!My dad promptly went to the Germantown Halal Meat Shop and was able to get comparable Porterhouse steaks for $18 per pound, and they were amazing!I can’t justify a 244% surcharge for similar or marginally better Porterhouse steaks.

Second to none butcher shop that we are lucky to have in Montgomery County. My husband and I have been coming here for years, especially for special occasions. Always a treat because of their amazing selection of high quality meats and customer service. Huge kudos to the Chop Shop Butchery staff for running this awesome small business (and also for being great people - they found my wallet after I dropped it and let me retrieve it even when they had closed and were hard at work prepping for the next day). Thank you John and team!

I finally found a butcher on the east coast that sells tri tip. It's more pricey that what I used to pay in California, but it was so tasty and totally worth it! The people who work there are super friendly and helpful too!

I just discovered this place and I'm very impressed with the level of professionalism and knowledge that Luis had. The staff here is friendly and pleasant. Luis took his time to share tips and details on the quality of their products.They have a variety of meats professionally displayed. I am always in the mood for a tomahawk steak, so, I was so happy to find some here. My daughter loves burgers, so I picked some patties too.Oh! And they age their steaks!!!

Great cuts and the beef brisket was great. Would come here more often because they were quick and easy. Had no problems whatsoever.
