“So, I want to say something about the ground beef that we got from Tyner Pond Farm. We’ve used it three times so far and getting ready to use it a fourth time today for chili. I’ve never cared for ground beef from the grocery stores because it just didn’t look right, it didn’t have a great mouth feel…and I’m a texture girl. A few of the issues I had with store bought was finding bone pieces in my meat. Also, it would shrink up so much I felt I had to make extra to make it stretch…I’m just trying to feed a family of 5 here! Being new to local, farm fresh I was skeptical about buying ground meat, but I was already putting myself out there to see how budget friendly it would be and how far we could make what meat we ordered stretch for us. Let me tell ya’…I ain’t mad at my decision.
One pound of Tyner Pond, ground beef yielded maybe 1/4 c. of fat with hardly any shrinkage. The ground beef filled the bottom of my Dutch oven before adding the rest of my ingredients. It made for a very meaty (bone free) chili and was a huge hit.
