Hands down, Bitta-Blue has The. Best. Eggs...I have ever had the pleasure of eating. Or even just cracking open -- to see their beautiful orange yolks! I've always looked for eggs from "pastured" chickens, but these aren't just any ol' "cage-free" eggs; these are as-good-as-it-gets. I thought it was Bitta-Blue's delicious Asian greens their diet is supplemented with, but these eggs -- like no others I've come across -- are fantastic, and deep orange, all year round. My favorites are the huge, rich duck eggs -- over easy, please, but great scrambled too -- but I try to keep my refrigerator stocked with some of each.If you miss any of the farmers' markets where Bitta-Blue vends, you can always try the small blue cooler that conveniently sits on the roadside stoop in front of the farmhouse. Really -- you've got to try these eggs!

Each week, we look forward to buying what Susan at Bitta-Blue Farm has to offer. We know it's organic, a little different/exotic, and full of flavor! And if you want a recommendation on how to prepare, Susan provides that too. There is usually a variety of greens, and Tat Soi is my latest passion. Kale, chard, arugula, tomatoes and more are superb. What is especially unique is her fresh goat cheese!
