Well, I wanted another 240mm chef’s knife and so I bought this gyuto stainless clad with SLD core steel from Yoshihiro cutlery. It’s beautiful: the hammered stainless cladding, the ebony handle, and above all how it cuts. I’ve haven’t noticed any reactive staining yet though I believe the core steel is semi-stainless.I sharpened it right out of the box - it didn’t take much, it does sharpen very easily, it felt like I was sharpening my shirogami knives.It’s my eleventh knife from these guys. I have bought a couple from other dealers but it seems the quality is never as good as Yoshihiro.Go for it!

I ordered the "Yoshihiro Super Blue Steel Stainless Clad Gyuto Chefs Knife Rosewood Handle - 8.25" (210mm) & Saya × 1" for my brother for Christmas. He loves cooking and loves Japanese chefs knives. I paid $256.98 for what I thought would be a nice knife.I received the knife in its really nice Gold Gift wrapping, everything was great until Christmas morning. My brother opened the gift and it was scratched and the knife edge had a big chip on the cutting edge. He was still appreciative of the thought but I was extremely disappointed. Something that should have definitely been caught by Quality Control.It gets worse. I email Yoshihiro and explain the situation and sent pictures/video looking for a solution. I was hoping for a replacement at the very least my money back. They never offer a replacement and tell me to ship it back and will be charged with a restocking fee. I literally wanted what I originally paid for but after dealing with their customer support I would advise anyone to take their business elsewhere.

Well, I’ve been collecting yoshihiro knives for about 7 years now and use them professionally day in, day out. I have about 8 and they have all held up wonderfully and they’re very easy to keep sharp and care for if you have a little knowledge. Every year or two I bring all my knives to Bruce to sharpen and they come back as new. I love these guys and will continue to bring my business here. I just WISH they did serrated knives!

Amazing Japanese knives and absolutely fantastic customer service. I ordered a HAP30 Nakiri vegetable knife on line. When I was erroneously sent a much more expensive ZDP189 steel version they promptly identified the problem and told me I could keep the finer knife.... or exchange at their expense if I preferred. I will be going back soon.

These knives are top tier! Yoshihiro knives are some of the most beautiful knives I have ever seen and used. Bruce made the whole buying experience very interesting and end interactive. He explains in detail what each knives strengths are and how they came to be. I'm on my third knife now and I'm soon to get another. As a Sues Chef, I work long hours chopping vegetables and slicing fish. I needed a knife that could keep up with my volume of work without dulling too quickly. Bruce recommended I try the ZDP-189 Super steel line, a steel that is highly renowned for its high edge retention. I haven't touched another knife ever since. They also offer sharpening services with skills that go above and beyond what anyone els has offered me. 100/10 would highly recommend! Big thanks to the Yoshihiro team!

Love my knives! I saw the knives on Amazon and I just googled the company and I got excited that they have a location in Redondo Beach. I didn't know anything about Japanese knives and Bruce was very helpful, He knows every single knives the artist the location and the unique character of the knife. They have cutting boards and kitchen accessories that they also sell. Staff are friendly and helpful. I have no complaints about the store and the location is a plus

First time on google review, I drove 40 minutes to buy their hi-soft cutting board. At first the guy who taking care of me was very nice and polite. After decided which cutting board I gonna get, I asked him about Yoshihiro Knive which I always consider of buying but decided to pick other brand every time. He guided me on what they have. After I asked to see 3 particulars knives and asked in detail, other guy who I assumed to be a manager or supervisor of the first guy came talk to him in Japanese then came take care of me instead. I asked him to see another knife which I was interested in and he said “No!”. I asked him why not. He asked me what I really looking for, what the budget which is fine if his intention is to help, but not.So I just check out my cutting board as I didn’t wanna waste my drive as actually I plan for the knife and some other sharpening kits that I need to buy.I was so upset but just told him politely before I left that I don’t like how he approached me like that and will never come back or buy some things from Yoshihiro again.By the way, I am a chef who has some knowledge on knives and just another knife enthusiast who has more knives than he needed.And, This is a very common practice to choose a knife (you need to feel the balance, blade profile, weight, etc. to suit your cutting technique).In conclusion,- very rude service.- First and last time on the brand- My suggestion is to close the showroom and do only online business if you don’t wanna waste time on customer service. Imagine that you walk into showroom and was refused to see the merchandise that is what I felt. (Even cars or brand name bags, they are welling to show you their merchandise, but in this case I only asked to see 3 knives that is under $500, not even their hi-end knives and swords.

Overdue review; it should be noted that this is a cutlery shop that sharpens knives primarily for professional chefs. Very very high quality metal and sharpening. Nonetheless, they sharpened my father's camping knives for him and did an exceptional job. I just walked in and requested the service - they were happy to help. The master there does his work by hand, not a with a grinder. I highly recommend checking them out.

I was recommended by my culinary instructor to visit Yoshihiro's and I was very satisfied. I had used her knife before and really wanted a similar one of my own. The guy helping with the sale was very honest, knowledgeable, and was straight forward. We came just before closing and he helped us finish the sale and ship the knife home, saving us money and time. And to top it all off, the price was great too!

Yoshihiro Japanese knives are the best. They have a long list of Japanese knives collection different kinds cutting boards and accessories. I'm just a home cook and using Japanese knives is a different ballgame. It's so satisfying and enjoyable to cook. Bruce helps me a lot. He ask me what I'm going to do with the knives if I want it stainless or stainless clad or pure carbon. He is well informed and a master on what he does. He takes his time to explain to me the history and the pros and cons of the knife. The staff are so helpful and well informed as well.
